SEASONAL TABLE


Every month, Aukera opens its doors to 14 guests for an “experience meal” based on products from its orchard, vegetable garden and forest.





Transformed by a chef and tasted in unusual places on the estate, citrus fruits, vegetables, game and wild plants are found on the plates accompanied by natural wines in partnership with the Biarritz wine cellar "Retour verre le futur". As a preamble, guests are introduced to culinary practices through workshops (creation of cheese, charcuterie, cocktails, etc.).

Sample menu

- Herb flower fritter

- Caramelized onion soup, acacia vinegar, croutons, thyme, chives

- Kale & kumquat, fig leaf oil, honey, dried egg yolk

- “Pasta” with Siamese squash, roasted radishes, pea leaf pesto, borage

with or without venison stew (for those who want meat)

- Fig leaf ice cream, honeysuckle, fig crumble
